Flawless Fried Onion Rings

2 Vidalia or Texas 1015 onions, sliced 1/2-inch thick
2 cups flour
2 cups fine cracker crumbs
2 cups white cornmeal
2 cups buttermilk
1 cup Water
4 cups Crisco or Canola oil

Heat oil to frying temperature of 375 degrees F (190 degrees C)

Cooking Tip: Don't have a thermometer, then you can judge when the oil is ready by dropping a 1 inch cube of white bread into your hot oil. If the bread browns in 60 second then the temperature of the oil is approximately 365 degrees F

You will need three medium size mixing bowls for the fried onion ring assembly line.

Blend together cracker crumbs and flour into one of the bowls.

Mix together the water and buttermilk in the second  large bowl.

Arrange the third bowl with the cornmeal.

Slice the onion into 1/2 inch thick slices, saving the very small onion rings for use at a later time. Place all the onion ring slices into the flour and cracker crumbs coating all the slices completely. Then one at a time dip the onion rings into the milk and water bath solution and then coat the ring with the cornmeal covering completely.

Carefully add the onion rings in small batches into the hot oil. Leaving a lot of space around each piece so the onion rings will cook evenly and fry until golden brown.

Remove from the frying pan with a slotted spoon and drain on several layers of paper towels. After the rings have drained, you can keep the fried onion rings warm in a 200 degree F oven until all the food is fried.

Cooking Tip: Let the oil cool completely then discard safely. Do not reuse the cooking oil as it has already begun to break down from the heat and should not be used again.

Countdown now to your next Super Bowl party and call your huddle around these Flawless Fried Onion Rings.

Bet you can not say that three times in a row.
