Green Chile Chicken Casserole

Would You Like To Make a Green Chile Chicken Casserole That Is Tasteful And Healthy Too?

Chicken With Green Chile Casserole

1 tablespoon vegetable oil
1 medium onion, chopped
2 1/2 cups cooked, shredded chicken breast meat
1 (7 ounce) can  Diced Green Chiles
1 (1.25 ounce) package  Taco Seasoning mix
8 corn tortillas
1 (15 ounce) can Black beans, drained
1 Cup shredded Cheddar cheese, divided
1 Cup shredded Monterey Jack cheese, divided
1 (16 ounce) jar Mild Home Style Chunky Salsa

Preheat the oven to 350 degrees F. Grease and set aside a 13 x 9 x 2  inches glass baking dish.

Using a large skillet over medium heat sauté chopped onion in 1 Tablespoon of oil until tender. Remove from the heat and combine green chilies, chicken and seasoning mix until well blended and set aside.

Place 4 corn tortillas in the greased baking dish followed by the chicken mixture, drained Black Beans and 1/2 cup of cheddar cheese and 1/2 cup of Monterey Jack Cheese.

Cover with remaining corn tortillas, Salsa and the remaining cheese.

Bake in the oven for 35 to 40 minutes until heated through and the cheese is totally melted.
